PW Recipe #10 and 11...Pot Roast and Creamy Mashed Potatoes...

OK so Pot roast is not really a "welcome" thing in my house...my sweet husband, while LOVING meat, doesn't really care for meat that has become "mush" and dried out by cooking in its own meat juices...and this is all new information to me. Funny, we've been married almost 8 years and I'm still discovering new things...Hooray for a life time of discovery. So anyways PW's Pot roast...it is simple and very very tasty. She says that the fresh herbs are really the key to the yummy flavor and I totally agree with her. You sear the onions and carrots, then the meat. Put it all back in the amazing cast iron skillet (or dutch oven) and cook on low for 3-5 hrs. BUT first topping it with fresh rosemary and thyme. Now, Charles and I both are predisposed against rosemary. We both agree that it tastes like pine trees...and while we LOVE Christmas and such, we aren't such fans of tasting pine trees in our food :) So skeptically I followed the recipe (I'm doing quite well, you know :)

And the herbs really, really make  the difference. And it didn't even ttoally taste like Christmas trees!!

Now, her creamy mashed potatoes...let me just say, I don't really care for mashed potatoes - they don't really do it for me. But if i had to eat mashed potatoes, these would be my choice. Cream cheese, butter and 1/2 and 1/2. How could they be bad??

The pot roast was by far the juiciest, yummiest roast I've had in 10 yrs...or maybe ever and the potatoes were...delectable. :) Score another A+ for PW!
