Recipe # 8 PW's Sour Cream Pancakes.
Ok so I was REALLY REALLY skeptical about this one. SOUR CREAM in pancakes? Really? Confession: I even made a batch of "regular" pancakes just in case...oh me of little faith in PW's recipes!
Yummy. Light. Creamy - can't say I've ever said that about a pancake before. Delightfully different. Asked Chuck if we could have them again and he said a very hearty, "yes!"
There is more sour cream in the "batter" than there is flour. It is shocking how ... deep the flavor is. I did, May PW never know, make the mistake of getting Fat Free (EW!) sour cream. And while it is really good for FF (yes, it actually tastes good) I will definitely go with a bit more fat next time :)
Altho you cook them in butter so maybe the FF sour cream is the way to go....
My 1st attempt at turning them was ... well, as you can see, tragic. Might have been due to the fact that I am still getting used to my amazing cast iron skillet, or the fact that my sausages were close to burning, or that I discovered the handle of my spatula was in the flame of the gas stove (and I discovered this by putting its hot melty-ness in my hand), OR the fact that Wyatt was sitting on the far counter opening the last banana, attempting to tear open the banana bread bag with his teeth and then going for a mango. You'd think I never feed the boy. So all of that to say that, this hilarious picture is my own lack, not the recipe. And did I take a picture of the perfectly round and well-cooked pancakes? NOPE. We ate 'em. Yum-o.
This cooking thru PW's cookbook is making my menu so, so much more interesting. Never in my born days would I have tried Sour Cream Pancakes. Mentally gearing up for Fried Chicken....That is Chuck's request for his birthday...so I have till April to get mentally, emotionally, and oil-ly ready :)
